1 Serving of soba (buckwheat) noodles
3 Tbsp of miso
1 Tbsp olive oil
1 bunch of kale
1/4 chopped eggplant
Sprinkle of sesame seeds
- Bring pot of water to boil, add soba noodles and cook until soft (warning these take much shorter than regular pasta).
- While noodles are cooking, combine miso, avocado, lime and olive oil in a blender, blend until smooth
- Fry mushrooms, eggplant (any other veggies you may want to add), ad kale at the last minuet to wilt.
- Drain soba noodles and combine with dressing and veggies, garnish with sesame seeds. Enjoy warm or cold!
