Avocado Miso Soba Noodles

1 Serving of soba (buckwheat) noodles

1 Avocado

1/2 Lime

3 Tbsp of miso

1 Tbsp olive oil

1 bunch of kale

2 mushrooms

1/4 chopped eggplant

Sprinkle of sesame seeds


  1. Bring pot of water to boil, add soba noodles and cook until soft (warning these take much shorter than regular pasta).
  2. While noodles are cooking, combine miso, avocado, lime and olive oil in a blender, blend until smooth
  3. Fry mushrooms, eggplant (any other veggies you may want to add), ad kale at the last minuet to wilt.
  4. Drain soba noodles and combine with dressing and veggies, garnish with sesame seeds. Enjoy warm or cold!
