A healthy spin on a classic dish!
1/2 cup cooked quinoa
1 tbsp sesame oil
1 tbsp soy sauce (or tamari)
1 leaf of kale
Handful of edemame
Green onion & Sesame seeds for garnish
- Heat half the sesame oil in pan or wok, add add veggies and fry until cooked (or almost cooked)
- Add quinoa with the rest of the sesame oil, soy sauce and mix
- Crack egg into pan and scramble with the rest of the ingredients. Or feel free to fry egg separately and add on top (as shown in photo).
- Garish with green onions and sesame seeds, enjoy!
