Quinoa Fried Rice

quinoa, fried rice, mushrooms, kale, peppers, carrots, onion, edamame

A healthy spin on a classic dish!

Ingredients:

1/2 cup cooked quinoa

1 tbsp sesame oil

1 tbsp soy sauce (or tamari)

1 carrot

2-3 mushrooms

1/4 pepper

1/4 zucchini

1 leaf of kale

Handful of edemame

1 egg

Green onion & Sesame seeds for garnish

Method:

  1. Heat half the sesame oil in pan or wok, add add veggies and fry until cooked (or almost cooked)
  2. Add quinoa with the rest of the sesame oil, soy sauce and mix
  3. Crack egg into pan and scramble with the rest of the ingredients. Or feel free to fry egg separately and add on top (as shown in photo).
  4. Garish with green onions and sesame seeds, enjoy!
