Adapted from Love and Lemons
1 tablespoon coconut oil
1/2 medium onion
1 teaspoon garam masala
1/2 teaspoon smoked paprika
1/4 teaspoon cayenne
1 large sweet potato
1 ripe pear, peeled and chopped
3 cups water
1 teaspoon salt, plus more to taste
1/4 cup coconut milk
4 sage leaves
- Use a fork to poke holes in sweet potato, wrap in tin foil and bake in oven at 450 for about 45 minuets (depending on size). This step can be done beforehand or use a pre-cooked sweet potato. When finished, peel and cut into cubes.
- Heat oil in pan, add onions and cook until translucent. Stir in spices (not sage) and cook for 1 minuet, then add sweet potato and pear, cook for 2 minuets.
- Add water and sage, let it simmer for 5-10 minuets
- Transfer to a blender and add coconut milk, blend until smooth, enjoy!
