Loaded Hummus Collard Green Wrap

Ingredients:

Collard green leaf

Hummus (Try our Sweet Potato Turmeric Hummus)!

Cabbage

Carrots (Julienned or Spiralized)

Avocado

Cucumber

Red Pepper

Fresh basil or cilantro to garnish

Method:

  1. Slice thinly, julienne or spiralize vegetables
  2. Lay out collard green, cut of stem and  excess green place inside wrap
  3. Spread hummus evenly over wrap. Place veggies to one side (as much as you can)
  4. Fold bottom up and roll tightly, squeeze with hands. Cut and enjoy (sometimes you may need a toothpick to hold it together if you plan to take it to go).

These wraps have infinite possibilities! Here is one with mango, sprouts, edemame, lemon and cilantro!
