Healthy Banana Bread

1/3 cup melted coconut oil

1/2 maple syrup

2 eggs

2 ripe bananas (mashed)

1/4 cup non-dairy milk (or water)

1 tsp baking soda

1/2 tsp cinnamon

1 3/4 cups oat flour (could also sub whole-wheat flour or quinoa flour)


  1. Mix melted coconut oil with maple syrup. Mix in the eggs, then mix in the bananas and milk. Then add baking soda and cinnamon.
  2. When mixed, add flour and mix well into a batter.
  3. Pour into a loaf pan (greased or with parchment paper) and bake at 325 F for about 55-60 minuets

Enjoy as part of a healthy breakfast, snack or dessert!
