1/3 cup melted coconut oil
1/2 maple syrup
2 ripe bananas (mashed)
1/4 cup non-dairy milk (or water)
1 tsp baking soda
1/2 tsp cinnamon
1 3/4 cups oat flour (could also sub whole-wheat flour or quinoa flour)
- Mix melted coconut oil with maple syrup. Mix in the eggs, then mix in the bananas and milk. Then add baking soda and cinnamon.
- When mixed, add flour and mix well into a batter.
- Pour into a loaf pan (greased or with parchment paper) and bake at 325 F for about 55-60 minuets
